[生活] 氣味分子揮發問題
葡萄酒倒進杯子後,晃杯會讓氣味充滿杯中
在嗅聞時會形成氣味分層,從上到下分別為花果香、礦物香、酒精味
花果香的主要成分為酯類(如3-mercaptohexanol)
醇類(如4-mercapto-a-methylpentan-2-ol)
礦物香的主要成分為酯類(如2,3-dithoil-ethylpropionate)
而酒精味則為乙醇
為什麼最輕的乙醇會在最下面的分層?
這跟揮發性的程度有關嗎?
