[問題] 蛤蠣料理前可以先蒸開嗎?
昨天到全聯買了真空包裝的蛤蠣一包
因為不知道有沒有吐過沙 所以就先讓他們吐沙約2個小時(常溫+鹽水)
清洗的時候有洗很多沙出來(但不清楚是外殼的沙還是真的是吐出來的@@)
因為從全聯的袋子裡拿出來時,有幾顆被壓碎了...
我有挑起來,但是吐沙的過程中都沒有看到他們打開殼
(我媽在傳統市場買的蛤蠣吐沙時,都會開嘴巴耶!)
很擔心他們已經死掉了.....
因為是想加在炒烏龍裡(今晚晚餐!)
但是擔心蛤蠣死掉了,讓我整鍋白費
所以想先把蛤蠣用電鍋蒸熟,然後再加進麵裡拌炒
請問版上的大家,這樣可行嗎?口感會有很大的影響嗎?
