[食材] 滷肉用的肉
最近有在練習下廚,閃光說想要試作看看媽媽作的滷肉,就回去問了作法,
但媽媽們作菜真的都靠感覺的RRRRRR,閃光也不懂作菜根本雞同鴨講,
例如問水要不要淹過肉,閃光媽就回答:你想淹過就加多一點水啊(不耐)T.T
其中問到要用哪種肉,閃光媽說了種我沒聽過的肉,聽起來像「踏心肉」(台語)
直覺想到是胛心肉,但閃光堅持不是,因為家裡從來不吃胛心,
說是豬胸部的肉,切下來是正方型,比較沒這麼肥.......
問了比較熟的肉攤也是不知道,只好問問看板友有人聽過這種肉嗎?Q___Q
